Blogmas Finale


December 26th: Nothing much happened on the today. I slept in quite late, again lazied around, cooked and ate. I've been thinking of going Boxing Day shopping today but then I decided against it, I did not want to get stuck in crowds, line ups or in the parking lot. Hell to-the-no. I mentioned in my last post or so that I want to re-vamp my closet but I think i'll go on Sunday or next week instead, once all the holiday palooza is over with! On the other hand, it was a really good food day. I made this yummy veggie soup (shown above) and Kushka Rice with Mutton Korma (not shown). The soup turned out AMAZING! I will def be making it again, if you are interested, the recipe is below.

Ingredients
  • 2 Tbsp of Olive Oil
  • 1 Medium Onion Chopped 
  • Handful of Mint Chopped 
  • Handful of Coriander Chopped 
  • 3-4 Cloves of Garlic Chopped 
  • 1 Tsp Ginger Chopped 
  • 3 Stalks of Celery Chopped 
  • 3 Small Carrots Chopped 
  • 1 Small Tomato Chopped 
  • Half a pack of Tofu (optional) 
  • Add any other vegetable of your choice including: Mushrooms, Green beans, etc
  • 1 1/2  tsp Salt (or to taste)
  • 1/2 tsp Black Pepper Powder (or to taste)
  • Pasta/ Noodles (optional)
  • 1 tsp Sabzi/ Pav Bhaaji Masala Powder (optional)
  • 3 Cups of water 
Steps

  • Heat 2 Tbsp of Olive oil to a large deep pot on medium heat.
  • Add Onion, Mint, and Coriander and fry till Onion becomes soft.
  • Add chopped Garlic and Ginger and fry for 3-4 minutes, continuously stirring.
  • Add tofu (optional) and continue to fry.
  • Then add celery, carrots, and other vegetables to the mix.  
  • Continue stirring. 
  • Add tomato, salt, pepper and sabzi masala (optional).
  • Stir, then add 3 cups of water. Add more or less water, depending on your preference. If you like a chunkier soup then add less water, if you prefer more then add more water. 
  • Stir the mixture on high heat for 3-5 minutes. 
  • Let simmer for 1 1/2 hours on low-medium heat covered. 
  • Stir every 10 minutes or so then cover. 
  • Towards the end of the cooking process add pasta or noodles of your choice (optional), stir then cover. 
  • Once pasta/ noodles have cooked, serve hot. 

And that's pretty much it. I honestly don't stick to recipes. I prefer to do everything to taste, that's why my soup is a little chunkier then most people might prefer. I like to do things my own way! No rules! 
This is such a healthy and hearty meal, perfect for days in the winter time. If you do decide to try it out let me know how it goes!
